1-1/4 cup cornmeal flour
3/4 cup all-purpose flour
2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1-1/3 cups milk
3 tablespoons melted butter
2 egg, slightly beaten
¼ cup agave nectar or honey (more if you like them sweeter)
1-1/2 Tbls vegetable oil
1/2 cup chopped dry Spanish Chorizo
1 can 4oz chopped green chiles
1 can 4oz jalapenos (or fresh)
Orange Chipotle Butter:
1 stick softened butter
1 Tbls finely chopped Chipotle in Adobe Sauce
Zest of 1 orange plus 1 tbls juice
1 tbls honey
Whip together in stand mixer and refrigerate for an hour
1) Preheat and lightly grease a waffle iron according to manufacturer’s instructions.
2) Whisk cornmeal, flour, baking powder, baking soda, salt, and chorizo together in a bowl. Stir buttermilk, oil, butter, green chiles, and egg together in a separate bowl; stir into flour mixture until batter is just blended.
3) Ladle 1/2 to 3/4 cup batter into the preheated waffle iron; cook waffle according to manufacturers’ instructions until golden brown, about 5 minutes. Repeat with remaining batter.
